Yalumba The Cigar 2012From $26.95
Similar to our estate wine Menzies, “The Cigar” is made through traditional small lot winemaking techniques. The grapes are crushed to small static fermenters and as the fermentation commences the temperature is allowed to peak early at 30°C, then given more control around 20°C. This ensures good extraction of colour and tannin. The grapes stay on skins for around seven days though some tanks are given extended skin contact before pressing. The wine was matured for 22 months in mainly French oak hogsheads and barriques; 28% of them new. This wine is red in hue with crimson highlights. The nose is at full intensity flaunting savoury blackcurrant fruit and cherry ripe highlights. The wine’s palate shows a warmer vintage and opens with cassis and ripe cherries. There are layers of plum and cherry fruit entwined with middle weight tannins giving a lengthy savoury textured finish.
Dalrymple Estate Chardonnay 2014From $34.95
Apple blossom and white peach are coerced from the glass with hints of crushed caper and cinnamon. Fresh quince and Asian spices add to the complexity. Fresh citrus and melon flavours are balanced with a fine fleshy texture and fine acidity. The subtle spice derived from the French barriques adds complexity as well as structure through the palate and into a clean fresh finish.
Dalrymple Sauvignon Blanc 2014From $25
The 2014 Dalrymple Sauvignon Blanc was sourced from 3 very distinctive sites across Tasmania. The Coal River Valley, near Hobart and the Relbia area of the Tamar Valley provided the majority of the fruit along with a smaller parcel from our own Dalrymple vineyard at Pipers River.To maximise complexity we harvested and fermented each parcelof fruit separately with a range of yeast strains and lees contact.A small portion was fermented in old French oak barriques toadd texture.Fresh and vibrant aromas of lemongrass, honeydew, peach skin and pineapple with hints of crushed hazelnuts adding complexity.The palate is juicy with fresh melon and paw paw. Bright acidity gives length, balance and clarity to the rich fruit and tightens to a clean finish.FOOD MATCH : Textured Asiatic dishes

Product DescriptionWe are looking to soften and integrate the strong natural tannins of this Mudgee fruit without an overt oak influence. This is a wine that is built for cellaring and will take up to ten years to really reach its peak.Growing Region:Mudgee (500m)Vintage:The Lowe ‘Block 8’ vineyard was planted in 1995 and is organic, dry grown and untrellised. Once in the winery, the grapes were fermented with natural yeast from the (reserve) Block 5 vineyard in open, wax lined concrete fermenters.
