    They are hare, there and everywhere with their wines, and have garnered 5-stars from Halliday for a number of years. This cab merlot offering shows aromas of cassis, mint and crushed leaves on the nose, whilst the palate is quite fulsome and plummy, with licks of After Eight mints, spicy, toasty oak, fine-grained tannins, bright acidity, and a decent, red-fruited finish. This could well improve with a couple of years in the cellar.

He passed on in the late 1880's and the creek would forever be named after his most important tool, the Snob. The small anvil used to shape the toe end of a boot.     Appearance: Medium red with red-purple hue. Nose: Clean, aromatic and complex, with classic Margaret River characters of currants, bay leaf and damp earth. There is a perfumed lift with red berry, cocoa and balanced cedar oak. Palate: Medium bodied with suede like tannins and a fleshy texture. The palate has a mix of currants, blackberry and red berry fruit with more complex notes of cocoa, bay leaf, coffee creme and damp earth. There is underlying cedar oak and a floral-musk like perfume. The wine has a smooth, firm finish. Food: Food matches Meat dishes, saucy pastas and cheeses. Cellaring: Drinking well now but will develop further over the next 3 to 5 years. Alcohol: 14 Winemaking: Each parcel of fruit was gently crushed into small open fermenters with traditional heading down boards where fermentation was carried out under strict temperature controlled conditions. Gentle extraction (a Forester Estate style) was achieved by daily draining of wine away from skins and returning back over. The wine was pressed to tank, where 100% was sent to new and older French oak barriques to complete the primary and malo-lactic fermentation.

    Appearance: Deep ruby red. Nose: The wine exhibits ripe cassis and dark chocolate aromas. High notes of cedary oak and bay leaf add further complexity. Palate: The palate unfolds in a myriad of layers of ripe blackcurrant and red fruit interwoven with savoury oak. The long and flavoursome finish is well supported by dry and fine grained tannins. Cellaring: 3 - 5 years. Alcohol: 14.7% Winemaking: The Cabernet Sauvignon was picked on 19 March 2012 at a low rate of 4.4 T/Ha. The Merlot was picked on 29 March 2015 at 6.3 T/Ha. The individual batches of Cabernet Sauvignon and Merlot were crushed and subsequently fermented in a combination of upright static fermenters and open fermenters. Following malolactic fermentation, the wines were allowed to mature for 18 to 20 months in new and seasoned French oak barriques. Individual batches were assessed and blended before the wine was lightly fined, filtered and bottled.
