  18. Appearance: Medium red with red-purple hue. Nose: Clean, aromatic and complex, with classic Margaret River characters of currants, bay leaf and damp earth. There is a perfumed lift with red berry, cocoa and balanced cedar oak. Palate: Medium bodied with suede like tannins and a fleshy texture. The palate has a mix of currants, blackberry and red berry fruit with more complex notes of cocoa, bay leaf, coffee creme and damp earth. There is underlying cedar oak and a floral-musk like perfume. The wine has a smooth, firm finish. Food: Food matches Meat dishes, saucy pastas and cheeses. Cellaring: Drinking well now but will develop further over the next 3 to 5 years. Alcohol: 14 Winemaking: Each parcel of fruit was gently crushed into small open fermenters with traditional heading down boards where fermentation was carried out under strict temperature controlled conditions. Gentle extraction (a Forester Estate style) was achieved by daily draining of wine away from skins and returning back over. The wine was pressed to tank, where 100% was sent to new and older French oak barriques to complete the primary and malo-lactic fermentation.

  19. Olmo is always a cab blend with cab franc taking the lead. It's based on the red wines of Bordeaux, and shows smells of dark fruits, tobacco leaf, toasted cedar and subtle herbs on the nose. The palate is medium-bodied and stylish, with cherries, earthy spice and cedary flavours, fine chocolaty tannins, and a smooth, bright finish. Great with a beef stew, or a veggie stack with red peppers.
