    Appearance: Vibrant plum Nose: Lifted notes of black cherry, mulberries and fresh spices with hints of mocha. Palate: Rich notes of plums and blackcurrants dominate with layers of mocha and spice lingering on the palate. Alcohol: 14.2% Winemaking: Low cropped, hand harvested fruit from the Limestone Coast gave this wine intense, rich flavours. It was crushed and destemmed to small open top fermenters. After 24 hours cold soak to draw out delicate tannins and intense colour, the grapes were hand plunged for six days to extract primary fruit flavours and firm but velvety tannins. The wine was pressed directly to French oak casks for 12 months maturation after which it was lightly fined with egg whites and sent to bottle. Best cellaring for 5 to 10 years.

    Appearance: Plum red. Nose: Rich red plums with layers of mocha oak. Palate: Ripe black berry fruit characters are layered over rich, creamy textures derived from oak maturation. Well structured ripe tannins give the wine a rich, textured palate. Alcohol: 13.75% The Shiraz fruit was sourced from the Adelaide region which is renowned for the sandy loam found there. The grapes were harvested in late April when the fruit was at its optimum level of ripeness. This wine delivers elegant spice combined with a rich chocolate finish. Good drinking now and will improve if kept for up to 10 years.
