  4. This wine reflects this perfect synergistic combination of Coonawarra’s trademark finesse and elegance with Wrattonbully’s generosity and power. Appearance: Flecks of purple set in a brilliant ruby red. Nose: Bramble berries and mulberries with hints of cloves and rich spices. Palate: A complex array of dark berries meld with raspberry, dark chocolate and star anise. The wines rich fruit and spice is balanced with subtle oak, and velvety tannins, which combine to deliver an intense, yet elegant finish. Food: Enjoy with a tender rack of lamb, gremolata and maple syrup glazed roast vegetables with lashings of your best olive oil. Cellaring: With careful cellaring, this wine will gracefully age for the next 10-15 years. Alcohol: 14.5% Winemaking: An excellent spring combined with a great berry set provided a vintage with balanced yields and high quality fruit. The warm summer months followed by a beautiful long ‘Indian summer’ allowed the grapes to be harvested at optimal flavour and maturity. Only the finest parcels of fruit were selected from premium Coonawarra and Wrattonbully vineyards, enabling our winemakers to craft a wine that reflects this perfect synergistic combination.   10. Jack steps up to the plate with this quite lovely cab sav out of the Coonawarra. Smells of blackcurrants, red berries, toasty oak and a hint of mint climb out of the glass, whilst the palate is fuller-bodied, juicy and slinky, with fine tannins, poised acidity, and a fruity, slightly oaky finish. It will benefit from another year in the cellar, but would be great tonight with a nice beef casserole.

Although there is lots of sunshine on the island, crucial in ripening the grapes, the cooling sea breezes help protect the grapes from over-ripening on the vine. Even during periods of extreme heat Kangaroo Island’s vines are better protected than most mainland vineyards thanks to these maritime breezes which also lead to much cooler night-time temperatures, giving the vines a much-needed break from the heat in the warmer months. With winemaker Jacques’ Lurton’s Bordeaux upbringing it is perhaps unsurprising he considers blending of varieties to be a crucial element in creating great wine. In the same way a great chef uses a range of ingredients to make a complex dish, blending provides a winemaker with the opportunity to pick the best bits from different grape varieties to create a more complete and complex final wine. “A 65/35% blend; part carbonic maceration at 30?C for 10 days in a closed vat saturated with CO2; after 30 days the grapes are pressed and the rest of the fermentation is of clear juice alone, the remainder is normally fermented, and the parcels separately matured for 2 years in 630l barrels.
