  4. Penfolds Bin 707 Cabernet Sauvignon 2015

Bin 707 is a true Cabernet Sauvignon representation of the Penfolds 'House Style': intensely-flavoured fruit; completion of fermentation and maturation in new oak; expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Full-bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australia's finest Cabernets. Aromatically more perfumed than normal - old-garden fresh dark red rose, lavender, and ylang-ylang. It transitions upon sitting, to conform to a more recognisable Bin 707 varietal demeanour. Uniform across the palate, the Bin 707 is balanced and expressive with focussed, fine-grained tannins. Approachable, imminently drinkable - now or in a decade or two.

  11. Penfolds Bin 169 Cabernet Sauvignon 2010

Penfolds Bin 169 was created to celebrate the modern winemaking philosophy at Penfolds that emphasises both the regionality and maturation of Cabernet Sauvignon in fine grained French oak; a departure from the Penfolds 'norm' of multi-regional blends in American oak. The Penfolds Bin 169, while of single origin is still a style that is immediately identifiable as Penfolds. 14. Penfolds Bin 389 Shiraz Cabernet 2013

Bin 389 is often referred to as ‘Poor Man’s Grange’ or ‘Baby Grange’, in part because components of the wine are matured in the same barrels that held the previous vintage of Grange. First made in 1960, by the legendary Max Schubert, this was the wine that helped to build Penfolds solid reputation with red wine drinkers. Combining the structure of Cabernet with the richness of Shiraz, Bin 389 also exemplifies Penfolds skill in judiciously balancing fruit and oak.Bin 389 is often referred to as ‘Poor Man’s Grange’ or ‘Baby Grange’, in part because components of the wine are matured in the same barrels that held the previous vintage of Grange. First made in 1960, by the legendary Max Schubert, this was the wine that helped to build Penfolds solid reputation with red wine drinkers. Combining the structure of Cabernet with the richness of Shiraz, Bin 389 also exemplifies Penfolds skill in judiciously balancing fruit and oak. “2013 is a really strong vintage for us across all areas,” says Penfolds Senior red Winemaker, Steve Lienert. “A good year, a little more concentrated than 2012, and structurally a bit denser due to lower yields and drought conditions.” He rates it up with 2010, long-lived, yet different in style. My impressions are slightly less flattering, though nonetheless a solid vintage, and 389 again rises above the pack. In sheer persistence alone, this goes down among the great vintages of Bin 389. It’s one for the cellar, a season of concentration, deep structure and vibrant colour that upholds brightness and promises decades of longevity. Blackcurrant and blackberry fruits meet black plums and liquorice, set against a backdrop of dark chocolate oak. A wall of tannins, fine and firm, securely structured yet polished, coax out a finish of outstanding persistence and impeccable line. Wow. A blend of 51% cabernet and 49% shiraz from the Barossa Valley, McLaren Vale, Padthaway, Wrattonbully and Coonawarra, matured for 12 months in 28% new American oak hogshead

  15. Penfolds Bin A Chardonnay 2015

98 Points & Winner of James Halliday Chardonnay Challenge 2016 98 Points Nick Stock Trophy – Best White Wine in Show – Royal Adelaide 2016 Trophy – Best Chardonnay in Show - Royal Adelaide 2016 97 Points & Special Value Wine James Halliday Reserve Bin A Chardonnay has evolved into a wine that is now a distinctive, single-region style in its own right, with a contemporary and distinctive Adelaide Hills Chardonnay persona. All fruit is hand-picked into small bins and then whole-bunch pressed. A portion of the juice is incrementally filled to barrel directly from the press and allowed to undergo a natural fermentation, sans inoculation. Every new and seasoned French oak barrique is its own unique 225-litre ferment. Enhanced mouthfeel and complexity is achieved by fermenting and maturing on solids. 100% malolactic fermentation (all natural). “Over the past 10 years this wine has (I suspect) won more gold medals than any other Australian chardonnay (Yattarna isn't entered in shows). Apart from maturation in French oak at 10 degrees C or less, the magic lies in the fruit and ultimately barrel selection, and I can see no reason why this thrilling wine won't add to its medal collection. It has a diamond-like intensity and purity to the fruit flavours, natural acidity and new French oak observers from the wings.” – 97 Points & Special Value Wine James Halliday “A whirlwind of a wine, the nose here has candied citrons, limes and white spring flowers that combine with a flinty edge of sulphidic complexity before opening to white peaches and nectarines. This is really elemental, pared back and restrained — an infant of a wine with much to come in time. The palate has a core of very pure, deep-set, citrus-focused fruit that's really focused around grapefruit. There are some subtle hints of honey and spices, and it turns savory through the latter phases and gently nutty. It's also gently grippy, nicely layered and very long. There's measure and restraint for all the r
