Cold soak and fermentation in open fermenters. Selected yeast. Hand plunged. Large format oak. 30% new Damy Alliers French oak for 11 months on lees. Tasted frequently touched rarely. “It’s firm, spicy, tangy and sure-footed but what sets it apart, or above, is the extra step up in intensity. It maintains its usual light-ish colour but the flavour impresses that bit more; driven here by impressions of cranberry and red cherry, fennel, undergrowth, orange rind and round-after-round of dry spice.
