The yield was between 1 to 1.5 tons to the acre. Fermented in 1 and 2 tonne open fermenters, the Shiraz and Mourvédre are fermented on skins for 7 to 8 days at a cool temperature to enhance the pure berry fruit and is hand plunged 3 times daily. It completed primary and MLF in oak and then matured for 20 months in oak, matured on lees to maintain fruit pro­le and animation, minimal SO2. Topped up every 3 weeks. This blend shows fragrant and complex blueberry, spice, earth chocolate and leather aromas wafting from the glass. This complexity carries through to the mouth with intense sweet/savoury ‑avours dominating.   4. Bellevue Estate is a family owned winery in the township of the world renown McLaren Vale wine region. Winemaker Corey Vandeleur produces only one product, the single vineyard Bellevue Estate Basket Pressed Shiraz. All wine is made on site in small two tonne open fermenters and hand shovelled via a small grape destemmer atop the fermenter allowing the fruit to enter the fermenter without the use of a must pump. After cold soaking 10% of the juice is run off to intensify colour and flavours. The fermenters are hand plunged prior to traditional hand rachet basket pressing. All wine is matured in french and american oak hogshead barrels for eighteen months. The wine is made with minimal intervention with no added tannins or finings. Only 1000 cases made.

Although there is lots of sunshine on the island, crucial in ripening the grapes, the cooling sea breezes help protect the grapes from over-ripening on the vine. Even during periods of extreme heat Kangaroo Island’s vines are better protected than most mainland vineyards thanks to these maritime breezes which also lead to much cooler night-time temperatures, giving the vines a much-needed break from the heat in the warmer months. With winemaker Jacques’ Lurton’s Bordeaux upbringing it is perhaps unsurprising he considers blending of varieties to be a crucial element in creating great wine.
