  6. Taittinger Comtes is one of the classic Blanc de Blanc Champagnes. It's Audrey Hepburn in a black taffeta ball gown that slinks and russles it's way around the palate. Scents of white florals, lemons, peaches and brioche float out of the glass, whilst the palate is elegant, appely and citrusy, with licks of baked bread, a chalky mouthfeel, and a bright, long, zippy finish. This has all the benefits of six years left on yeast lees to aid complexity and depth of flavor. There’s still a freshness and liveliness about this and it will reward with further cellaring, however if drinking now all it needs is some fresh oysters.

  8. There are few single vineyard Sangiovese’s in Australia but this is the highest echelon of the Pizzini offerings; a super premium red made in the Italian way. This is complex stuff with dried herbs, cherries, some plum and spice. It’s a big mouthful of savoury intensity that keeps revealing layer upon layer of flavour. It’ s laden with dark cherry and plum and other dark fruits and integrated oak but it’s the chalky tannins that hold it all together ensuring structure and length. This is in the long haul and will cellar comfortably for the next decade, if you do open it make sure it gets plenty of air.
