  15. Appearance: Pale lemon. Nose: Aromas of fresh lemon, grapefruit and pear with underlying vanillin oak. Palate: Dry, fresh acid structure with ripe white nectarine and yellow fruits such as lemon and pear. There is a lovely rich texture on the mid palate, originating from time ‘on lees’ and barrel fermentation. The wine displays pronounced flavour intensity and a long finish. Cellaring: Enjoy now or cellar for up to eight years. Alcohol: 13.9% Winemaking: The strongest section of the Chenin Blanc west block (block 4) was hand picked in the early hours of the morning on 4 March 2014. Whole bunches were transported directly to the winery and chilled for 24 hours prior to being whole bunch pressed using a gentle press cycle to avoid over extraction. Post settling, the juice was racked (including a small amount of lees) and then transferred to seasoned (older) French oak barriques for fermentation. No cultured yeast was added and the wine was allowed to go through a natural fermentation process. The wine spent nine months in seasoned oak and “on lees.” The final blend was lightly fined and filtered prior to bottling.
