  7. 98 Points Huon Hooke Sourced from their long established vineyards in Margaret River. This area exhibits the classic gravelly lateritic soils that drain to the west and the microclimate is strongly influenced by the Indian Ocean only 5kms away. These vineyards are manually cane pruned, meticulously treated as individual vines throughout the season and hand harvested in 6.5kg crates that allow each section to be handled with all the particular care it deserves. After destemming, individual berry sorting and light crushing, individual vineyard batches were fermented on skins for up to 30 days. At the desired balance of fruit and tannin extraction, each batch was gently basket pressed, with harder pressings kept aside. The individual parcels were racked to oak following pressing for malolactic fermentation. The wines were matured for 18 to 20 months (depending on batches) in selected coopered barriques of which about 70% were new. Blend : 85% Cabernet Sauvignon, 15% Merlot. “Deep, dark red colour with a good tint of purple, the bouquet likewise deep and mysterious, with traces of coffee grounds, tinged with quality oak: a serious wine all-round. It's full-bodied and very concentrated, profoundly flavoured and structured, with masses of tannin and a terrifically long finish. A powerfully built cabernet of outstanding potential. When two good mates get together, one the Chief Winemaker with a major winery from the Barossa Valley and with his own vineyard, the other with a passion for wine, the inevitable had to happen and Purple Hands Wines was created. Craig Stansborough and Mark Slade started Purple Hands in 2006 with a humble start, making just 100 dozen in the first vintage. Just over a tonne of hand picked Shiraz was crushed and barrel fermented in Craig’s shed and then came the hard part, to find a name for the label. Vineyards : Zerk Vineyard, Lyndoch. Circa 1880 PF Zimmerman planted 468 Cabernet Sauvignon vines on his family property ‘Woodlands’ situated on the outskirts of Lyndoch. We believe this to be one of the oldest bearing plantings of this variety in Australia and we feel privileged to be the custodians of this special part of the Barossa. “The concentration of flavour here is fantastic. So too is the fan of tannin that spreads through the back half of the wine, and then helps carry the fruit on and out through the finish. This is serious stuff, no mistaking it. It’s drenched in blackberries and plums, licorice and bitumen, and while there’s some (dark) chocolate flavour, and wafts of cedarwood, the oak has mostly been soaked up by the fruit. Some of the earliest plantings in the Clare Valley comprised, Cabernet, Cabernet Franc, Malbec and Merlot because Sevenhill knew that Cabernet when blended could be responsible for miracles. The Huia Winsome vineyard is situated on the edge of the Southern Valleys where the vines grow on clay. These grapes grown on the clay offer a richness and palate weight along with the ¿ne acidity of this area. The grapes were picked, gently pressed and underwent fermentaion with organic and natural yeasts with a little time in neutral oak.
